I combined it with champignon mushrooms and baby spinach, and I added pesto sauce to make it creamy. The recipe is below.<\/p>\n<p><strong>Preparation time:<\/strong> 40 minutes<br \/>\n<strong>Servings:<\/strong> 2-3 <\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1 cup champignon mushrooms, finely chopped<br \/>\n1 \u00bd cup brown rice<br \/>\n7-8 cup vegetable broth<br \/>\n1 small onion, finely chopped<br \/>\n1 garlic clove, mashed<br \/>\n\u00bd cup water<br \/>\n\u00bd cup vegan parmesan<br \/>\n1 tbsp extra virgin olive oil<br \/>\n1 tsp fresh basil, finely chopped<br \/>\n1 tsp fresh sage, finely chopped<br \/>\n1 tsp fresh chives, finely chopped<br \/>\n1-2 tbsp pesto sauce<br \/>\n1 cup baby spinach<br \/>\na pinch of salt<br \/>\na pinch of black pepper<br \/>\na pinch of fresh parsley leaves, finely chopped (optional)<\/p>\n<p><strong>Decoration:<\/strong><br \/>\na pinch of microgreens<br \/>\nred amaranth<\/p>\n<p><strong>Instructions:<\/strong><br \/>\n1. Pour the vegetable broth into a medium-sized pot and heat it.<br \/>\n2. Heat the olive oil at moderate temperature. Add the champignon mushrooms and onion. Simmer for 5 minutes until the mushrooms soften, and the liquid evaporates. Add garlic and simmer for 1 minute.<br \/>\n3. Pour the water, add brown rice, and a half tsp of basil, sage, and chive. Mix until combined. Cook the rice for 5 minutes, stirring occasionally.<br \/>\n4. Add a \u00bd cup of heated vegetable broth occasionally (until you use all the broth), then cook until rice absorbs all the liquid, for about 20-25 minutes.<br \/>\n5. Remove the pan from the heat. Add vegan parmesan, baby spinach, remaining herbs, salt, and black pepper. Pour over the pesto sauce and stir to combine.<br \/>\n6.
